You’ll Need:

1 cup of granulated sugar.
1 tsp of baking soda.
4 tbsps of chilled butter cut into small pieces.
½ cup of chopped dried apricots.
1 cup of buttermilk.
2 beaten eggs.
3 cups of all purpose flour.
2 tsps of baking powder.
1 tsp of ground cinnamon.
½ cup of chopped pecans.
2 large peeled and mashed very ripe bananas.

How to:

In a large bowl, mix together the flour, sugar, baking powder, baking soda and cinnamon until well combined.

Work the butter into the dry ingredients using your fingertips or a pastry blender until it looks like coarse crumbs.

Stir in the pecans and apricots, then mix in the bananas, buttermilk and eggs until well combined.

In a 5×9 lightly coated loaf pan, pour the batter and bake in a preheated oven to 350° for 60 minutes.

Turn onto a wire rack and let cool before serving.
