Salads are very important, and we all know that! My favorites are those which can make you forget about the main dish! Like this loaded baked potato salad!
4 large russet potatoes.
½ cup of mayonnaise.
½ cup of sour cream.
½ cup of shredded extra sharp cheddar.
4 tbsps of stone ground or yellow mustard.
¼ cup of chopped chives, divided.
8 strips of cooked crisp and chopped thick cut bacon.
Salt and fresh cracked black pepper.
Mix together the mayonnaise, sour cream and mustard in a medium bowl. Mix in ¾ of the chopped chives, salt and pepper until well combined. Add in the cheese and bacon.
Chill covered for 30 minutes.
For the potatoes, peel and cube them to ½ inch cubes and cook in salted water.
Once cooled slightly, add the potatoes to the dressing and garnish with some chives.
Easy, peasy and yummy! I can have as much as my stomach can take of this amazing salad! It’s so delicious, I promise you, you won’t get enough! Give it a shot, you won’t regret it!
