Kosher salt and freshly ground black pepper.
3 endives, halved and sliced into ½” half-moons.
2 firm but ripe pears cut into quarters, cored and sliced.
1 (4 oz) sliced wedge blue cheese.
2 tbsps of extra virgin olive oil.
1 cup of parsley leaves.
½ cup of toasted chopped pecans.
Mix together the vinegar, oil and ¼ tsp of salt and pepper in a large bowl.
Mix in the endives, parsley and pears until well coated.
Divide the mixture between 4 plates and top with pecans and a slice of blue cheese.
